NuttZo Tahini & Sweet Potato Salad
INGREDIENTS
2 sweet potatoes, peeled and cut into cubes
4 stalks of diced celery
1 small red onion sliced
1/3 cup NuttZo 5-seed Tahini Fusion
2 tbsp water
2 tbsp olive oil
3 tbsp apple cider vinegar
2 tbsp mustard
1 tbsp maple syrup
1/2 tsp cumin
1/2 tsp paprika
2 tsp salt
1/2 tsp pepper
1/2 tsp fennel seeds (optional)
INSTRUCTIONS
Place sweet potatoes in a pot of salted water.
Boil for 15 min or until slightly undercooked.
Drain potatoes and rinse in cold water.
In another pot add apple cider vinegar, water and maple syrup. Bring to a boil.
Turn off heat and add onions. Let sit for 20 minutes.
In a large bowl, combine NuttZo Tahini Fusion, celery, onion, olive oil, mustard, cumin, paprika, salt, pepper and optional fennel seeds. Stir well. When potatoes and onions have cooled, fold them into the large bowl and toss gently.
