Keto Green Bean Casserole

DESCRIPTION

Okay, who doesn’t get a little misty-eyed about green bean casserole around the holidays. If it’s not on the table, it’s not the holidays! Well, with this recipe you can have your green bean casserole anytime you want because it’s super easy and low carb!


INGREDIENTS

4 cups fresh green beans
1 cup mushrooms, sliced
1 shallot or 1/2 small onion, diced
6 slices bacon chopped into cubes and fried crispy for topping
1 T avocado oil
2 T butter
1 can coconut milk
2 T NuttZo Keto butter
1 T arrowroot powder or cornstarch
1/2 tsp salt
1/4 tsp pepper

 

INSTRUCTIONS

 

Wash and trim ends of green beans. Steam for 10 minutes in a covered saucepan with 1T butter and ½ cup of water. Strain beans and set aside.

While beans are steaming, lightly rinse mushrooms and pat dry. Sauté shallot/onion in butter and oil for 15-20 minutes, stirring frequently. You want the onions crispy. Add mushrooms and cook for 1 minute. Turn off heat and stir in crispy bacon.

While onions are crisping up, mix coconut milk, NuttZo Keto, arrowroot powder, salt and pepper in a small bowl. Add mixture to saucepan and bring to a boil over medium heat while stirring constantly. Simmer for 1 more minute and turn off the stove.

Place steamed green beans in a casserole dish and toss with coconut mixture. Top with onion and bacon mixture. You may want to warm up the dish for 10 minutes in the oven at 350 degrees before serving, but it’s perfect as is. Serves 6-8.
