Fig and Coconut Power Fuel NuttZo Granola Bars
INGREDIENTS
1 cup dried figs (soaked for 1 hour in warm water)
1/2 cup unsweetened vanilla almond milk
1/4 cup Power Fuel Nuttzo
1 tsp pure vanilla extract
1 1/4 cups + 2 tbsp gluten free rolled oats
1 cup unsweetened finely shredded coconut flakes
1 tbsp chia seeds
1 tbsp hemp seeds
1 heaping tsp cinnamon
INSTRUCTIONS
Preheat your oven to 350 degrees and line a square 8×8 baking pan with parchment paper. Spray with olive oil and set aside.
In a large bowl, mix all of the dry ingredients together.
Add the soaked figs into a food processor or high-powered blender with the almond milk, and blend until smooth; scraping down the sides as needed.
Add the Power Fuel Nuttzo and vanilla extract, and blend again until everything is fully incorporated.
Pour the wet mixture into the bowl containing the dry ingredients, and throughly mix everything together.
Pour batter into your prepared baking dish, and smooth and lightly compress the mixture into the bottom of the pan.
Bake in your preheated oven for 25 minutes or until the edges are lightly brown.
Allow to cool completely on a cooling rack before cutting into 14 bars, and drizzle the top with 2 tbsp. Power Fuel Nuttzo! Store in an airtight container in your fridge!
