NuttZo Chocolate Keto Muffins

DESCRIPTION

These muffins are for every chocolate lover following a low carb diet. The drizzle adds a sinful touch, and the NuttZo Keto makes each bite deeply rich in chocolate notes. You won’t miss the sugar, we promise!


INGREDIENTS

1 cup NuttZo Chocolate Keto
3/4 cup monk fruit (or substitute honey or maple syrup for a non-keto muffin)
1 tsp vanilla extract
2 eggs
1/3 cup unsweetened cocoa powder
1 tbsp almond flour
1/2 tsp baking soda
1/4 tsp salt
1/3 cup sugar-free chocolate chips (we used @lilys_sweets)

For the drizzle

2 tbsp chocolate chips (we used @lilys_sweets)
1 tsp coconut oil

INSTRUCTIONS

Preheat oven to 350 degrees F.
Grease a muffin tin with non-stick spray.
In a large bowl, combine NuttZo, monk fruit, vanilla extract and eggs until smooth.
Gently fold in cocoa powder, almond flour, salt and baking soda until batter is smooth.
Fold in chocolate chips.
Pour in muffin tins and bake for 20 minutes.
While muffins are baking, make the drizzle: melt chocolate chips with coconut oil.
Let muffins cool for 30 minutes and drizzle with chocolate sauce. Enjoy!
